They also offer three important B-complex vitamins: riboflavin for maintaining healthy red blood cells; niacin for supple skin and properly functioning digestive and nervous systems; and pantothenic acid, which aids in the release of energy from the fat, protein, and carbohydrates in the food you eat.<\/p>\n<p>Just one cup of mushrooms has the potential to release at least 15 different vitamins, minerals, and phytonutrients. A single Portobello contains more potassium than a banana \u2013 630 mg per serving \u2013 which helps maintain normal heart rhythm and muscle and nerve function, as well as a balance between your fluid and minerals. This in turn helps control blood pressure.<\/p>\n<p>Mushrooms contain selenium, a compound necessary for the proper function of the thyroid and male reproductive systems. It\u2019s an antioxidant that protects the cells from damage from heart disease, certain cancers, and age-related diseases.<\/p>\n<\/div><\/div>\n<\/div>\n<div id=\"pgc-1223-0-2\"  class=\"panel-grid-cell panel-grid-cell-empty\"  data-weight=\"0.333333333333\" ><\/div>\n<\/div>\n<div id=\"pg-1223-1\"  class=\"panel-grid panel-no-style\"  data-style=\"{&quot;background_display&quot;:&quot;tile&quot;,&quot;cell_alignment&quot;:&quot;flex-start&quot;}\" >\n<div id=\"pgc-1223-1-0\"  class=\"panel-grid-cell panel-grid-cell-empty\"  data-weight=\"0.333333333333\" ><\/div>\n<div id=\"pgc-1223-1-1\"  class=\"panel-grid-cell panel-grid-cell-mobile-last\"  data-weight=\"0.333333333333\" >\n<div id=\"panel-1223-1-1-0\" class=\"so-panel widget widget_text panel-first-child panel-last-child\" data-index=\"1\" data-style=\"{&quot;background_display&quot;:&quot;tile&quot;}\" >\n<h3 class=\"widget-title\">Portobello Mushrooms with Walnut Rocket Pesto<\/h3>\n<div class=\"textwidget\">\n<p><strong>Vegan and gluten free<\/strong><\/p>\n<p><strong>Recipe by Russell James &#8211; The Raw Chef<\/strong><\/p>\n<p>Serve as an entr\u00e9e or a main course with a leafy salad, olives and shavings of macadamia nuts.<\/p>\n<p>Serves 2<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>4 Portobello mushrooms<\/li>\n<li>3 tablespoons tamari (gluten free soy sauce) or coconut aminos<\/li>\n<li>2 tablespoon olive oil<\/li>\n<li>2 tablespoons lemon juice<\/li>\n<\/ul>\n<ol>\n<li>Toss the mushrooms in the tamari, olive oil and lemon juice for a few minutes.<\/li>\n<li>Dehydrate in for 3 hours at 115 degrees F, or if using an oven, place on a baking tray and cook on the lowest temperature, which is usually around 150 F (65 C) for about an hour, keeping an eye on them, so they\u2019re lightly cooked and softened.<\/li>\n<\/ol>\n<p><strong>For the pesto<\/strong><\/p>\n<ul>\n<li>120g (4ozs) of rocket (arugula) leaves<\/li>\n<li>\u00bd cup walnuts that have been soaked for 2 hours and rinsed<\/li>\n<li>3 tablespoons nutritional yeast<\/li>\n<li>1 tablespoon lemon juice<\/li>\n<li>1 clove garlic, minced<\/li>\n<li>\u00bd teaspoon salt<\/li>\n<li>\u2153 cup olive oil<\/li>\n<\/ul>\n<ol>\n<li>Pulse the leaves, walnuts, nutritional yeast, lemon juice, garlic and salt in a food processor.<\/li>\n<li>Whilst the food processor is running pour in the olive oil so it emulsifies and doesn\u2019t separate later on.<\/li>\n<li>Serve a couple of spoonfuls on each of the warm mushrooms straight out of the dehydrator or oven.<\/li>\n<\/ol>\n<p><strong>\u00a0<\/strong><\/p>\n<p><strong>Portobello Mushroom Burgers<\/strong><\/p>\n<p>Vegan and gluten free<\/p>\n<p>Serves 4<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>4 Portobello Mushrooms<\/p>\n<p>1\/3 cup balsamic vinegar<\/p>\n<p>\u00bd cup water<\/p>\n<p>2 tsp. honey<\/p>\n<p>1 garlic clove, minced<\/p>\n<p>\u00bc tsp. cayenne pepper (optional)<\/p>\n<p>2 Tbsp. olive oil<\/p>\n<p><strong>Directions<\/strong><\/p>\n<ol>\n<li>Clean mushrooms with a damp cloth and remove the stems. Place in a glass dish, stem (gill) side up.<\/li>\n<li>In a small bowl, whisk together the vinegar, water, honey,\u00a0garlic, cayenne pepper, and olive oil and drizzle it over the mushrooms. Cover and marinate in the refrigerator for about 1 hour, turning the mushrooms once.<\/li>\n<li>Prepare a charcoal grill, gas grill, or broiler to medium heat. Away from the heat source, lightly coat the grill rack or broiler pan with cooking spray. Position the cooking rack 4 to 6 inches from the heat source.<\/li>\n<li>Grill or broil the mushrooms until tender \u2013 about 5 minutes on each side, turning often. Baste with the marinade to keep them from drying out. Using tongs, transfer the mushrooms to a plate.<\/li>\n<li>Serve on buns and garnish with your favourite burger options, such as tomatoes, pickles, onions, ketchup, and lettuce.
