In a pan saut\u00e9 the pumpkin, garlic and onion and oil for 8 minutes until pumpkin softens.<br \/>\n2. Add spinach and curry powder and stir for 2 mins.<br \/>\n3. In a bowl stir the pumpkin mix with remaining ingredients.<br \/>\n4. Heat a little oil in a pan and measure out 1\/4 cup serves of mixture to make the fritters.<br \/>\n5. Serve on Moroccan sauce and garnish with mushrooms, cherry tomatoes and fresh herbs.<br \/>\nMoroccan sauce<\/p>\n<p>1 Tablespoon oil<br \/>\n1 onion finely diced<br \/>\n2 cloves crushed garlic<br \/>\n1 Tablespoon ginger pur\u00e9e<br \/>\n1 teas cumin<br \/>\n1 teas coriander<br \/>\n1\/2 teas mixed spice<br \/>\n1 chilli finely diced<br \/>\n400g canned tomatoes<br \/>\n4 Tablespoons tomato pur\u00e9e<br \/>\n1 teas salt<br \/>\n2 Tablespoons honey or date puree<\/p>\n<p>1. In a pan saut\u00e9 the oil, onion, garlic and ginger for 5 mins until soft.<br \/>\n2. Add spices and chilli and stir for 30 seconds.<br \/>\n3. Add tomatoes and pur\u00e9e and heat until just bubbling. Add salt and honey.<br \/>\n4. Using a blender blend until smooth.
